The Strawberry Gum (Eucalyptus olida) is a delicious, new, unique Bush Tucker flavour.
This beautiful tree is a rare Australian native, re-discovered in the wild in only one small area of NSW in the 1990’s.
But it is now taking the culinary world by storm – for its unique, sweet, fruity flavour.
And is fast becoming one of Australia’s newest farmed food crops.
The oil-rich leaves have a sweet, fruity taste and aroma.
So dried and ground foliage is used to flavour cakes, desserts, ice-creams, and confectionary; herbal teas and cocktail beverages; plus spicing fish, meat and stir-fry dishes.
It has a tangy, berry-like flavour.
Leaves, twigs and stems are also distilled to give an essence for food flavouring and an aromatic oil for cosmetics.
The Strawberry Gum is a decorative tree with creamy, spidery blossoms and those delightfully aromatic and flavoursome leaves.
It grows in an architectural, asymmetrical branching shape, and quickly reaches approx. 30m. high.
So while it is not suitable for small or suburban gardens, it is ideal for driveway, paddock or windbreak planting.
Eucalyptus olida is a frost hardy Australian native tree.
It prefers moderately fertile soil, and while it can tolerate periods of dry once established, it is not a desert specimen.
It grows quickly but can be kept in a large pot for some years, so even balcony gardeners can enjoy the unique flavour and enchanting aroma of Eucalyptus olida.
